These lemon bars are incredible! I was never a huge lemon lover, but lately I've become obsessed. My husband isn't a lemon person either, but he said these are his second favorite dessert. These bars go perfectly with springtime! I think I need to make some this week. ;)
For the crust
1 3/4 cup all-purpose flour
1/4 cup cornstarch
1/2 granulated sugar
1/4 teaspoon salt
1 cup (2 sticks) butter, softened
For the filling
1 1/2 cup granulated sugar
1/4 cup all-purpose flour
4 large eggs
3/4 cup freshly squeezed lemon juice
Preheat oven to 350.
Line 9x13 pan with aluminum foil (Or just use a disposable aluminum pan!) and spray with cooking spray.
Whisk together flour, cornstarch, sugar, and salt.
Cut the butter into cubes and stir into dry mixture. Use a pastry cutter, fork, or your hands to incorporate the ingredients.
Scoop mixture into pan and press into the bottom with your hands.
Bake for 15-18 minutes.
Allow crust to cool for 5 minutes before pouring filling over.
Combine sugar, flour, and eggs. Use a hand mixer to combine.
Add lemon just, mixing slowly.
Pour mixture over crust. Bake for 20-22 minutes until lemon filling is set.
Allow bars to cool, then refrigerate for 2 hours.
Sift powdered sugar over the top, cut into squares, and enjoy!
